Namoora (Semolina Slice)
Marwa's twist on a traditional recipe also known as harissa – this semolina slice is addictive because it's not as sweet as its long-established cousin. Easily made vegan with coconut yoghurt.

Ingredients
- 3 cups coarse semolina
- 1 cup desiccated coconut
- ¾ cup sugar
- 2½ cups natural yoghurt
- 75g butter, melted
- 1 tbs baking powder
- 50g raw split almonds
Sugar syrup
- 4 cups sugar
- 2 cups water
- 1 tsp orange blossom water
- Squeeze of fresh lemon
Method
- 1Heat oven to 200°C.
- 2Combine the semolina, sugar, yoghurt, butter, coconut and baking powder and mix well.
- 3Pour into a greased deep 38 x 25cm tray. Slice into squares and press an almond into the centre of each.
- 4Bake for 35 minutes.
- 5Make the syrup: combine water, sugar, lemon and orange blossom water, bring to a boil and simmer 5 minutes.
- 6Pour the syrup over the namoora.
- 7Return to the oven (turned off) for 2 more minutes.
- 8Remove, re-slice the squares, cool, then lift onto a platter and serve.
