Origin: Jamaica. The main producer of allspice is Jamaica. The berries are picked when green & at the height of their flavour, briefly fermented in heaps, 'sweated' in bags to accelerate their drying & browning, & then sun-dried for five to six days. Then they're bagged, sold to a spice merchant, shipped half-way across the world, purchased by another spice merchant & then sold to Oasis Bakery. Then they're packaged by Gina, our loyal & hard-working employee.
