  • 1kg tomato (chopped)

  • 1kg cucumber (sliced)

  • ½ bunch spring onions (chopped)

  • ½ bunch purslane leaves

  • ½ bunch flat-leaf parsley (chopped, leaves only)

  • ½ bunch fresh mint (chopped, leaves only)

  • 1 bunch radishes, halved

  • 2 tbs sumac

  • 1 tbs pomegranate molasses

  • 1 tbs sea salt

  • 2-3 lemons (juiced)

  • 2 tbs EV olive oil

  • 1-2 packets zaatar crisps *

* Or toast your own by brushing

two pieces of pita bread with olive oil,

sprinkling with zaatar and baking until

crisp and golden – around 5 mins

Method

  • Place the vegetables in a bowl with the spices, lemon juice and oil and toss together thoroughly.

  • So they remain crunchy, add the crisps just before serving.
