1kg tomato (chopped)

1kg cucumber (sliced)

½ bunch spring onions (chopped)

½ bunch purslane leaves

½ bunch flat-leaf parsley (chopped, leaves only)

½ bunch fresh mint (chopped, leaves only)

1 bunch radishes, halved

2 tbs sumac

1 tbs pomegranate molasses

1 tbs sea salt

2-3 lemons (juiced)

2 tbs EV olive oil

1-2 packets zaatar crisps *
* Or toast your own by brushing
two pieces of pita bread with olive oil,
sprinkling with zaatar and baking until
crisp and golden – around 5 mins
Method

Place the vegetables in a bowl with the spices, lemon juice and oil and toss together thoroughly.

So they remain crunchy, add the crisps just before serving.
