Origin: India. Ajwain is a close relative of caraway & is used in African, Asian & especially Indian cooking. Ajwain can be thought of as a seed version of thyme - it carries the essence of thyme (thymol) in a caraway-like seed. Lightly toasted & ground ajwain, with its dark & musty aroma, makes an excellent foil to sweet soups
